White Chenin is perfectly suited for the Méthode Traditionnelle. Its fruity aromas find their fullest expression thanks to the bubbles.
Lengthy ageing in cellars prior to sale lends it all its finesse and elegance.

The "Méthode Traditionnelle" is more widely known by its former name of "Méthode Champenoise". It consists in a second fermentation process once the wine is bottled. The gas given off by this fermentation mixes with the wine and is transformed into fine bubbles.
This second fermentation is called "prise de mousse".
It is followed by a long laying own process of at least 9 months, "sur lattes" (in stacks), in our freestone cellars.
Chenin is perfect for this sort of vinification. Chenin’s fruitiness and natural elegance mean it is an essential wine to have for all forms of festivity.

If the Cave des Producteurs de Vouvray is renowned for the quality of its sparkling wines, this is because it not only selects the best suited wines for the Méthode Traditionnelle, but also has excellent equipment for each stage of the wine-making process and uses the latest technology to improve quality.

The “Vouvray Petillant” differs from other "Fines Bulles" (fine bubbles) due to the fact that is more lightly sparkling, creating more space for the flavour of the wine itself.
“Vouvray Méthode Traditionnelle” has more bubbles, thanks to a more intense fermentation process, heightening the presence of the bubbles without altering the wine’s fruitiness. Its more luxurious pesentation means it is ideal for parties and celebrations.
The Cave des Producteurs de Vouvray makes several Cuvees of Fines Bulles, with different characteristics.
- Non Vintage: wines from 2 or 3 years are blended to obtain uniform quality year on year.
- Vintage: the year’s best wines are selected and bottled singly so as to capture the year’s specificities.
- Other cuvees result from blending wines selected for their specific flavours, and are normally laid down for several years in cellars before being put on sale.

Brut, sec ,or demi-sec ?

As an aperitif Brut is often preferred, whilst as a dessert wine a Demi-sec will be appreciated.
In Méthode Traditionnelle, brut or demi-sec is obtained by adding a wine-sugar liqueur.
It is added just after the disgorging. A different dose of liqueur (known as the expedition liqueur) is added to the bottle depending upon the end product. This dosage is calibrated depending upon the organoleptic qualities of the wine, so as to obtain a perfectly balanced result.

The expedition liqueur is made using the same wine as the cuvee being treated, to which sugar cane is added.
Sometimes an older still wine is used to lend greater character.

Tête de Cuvée "Vintage"
Our winegrowers’ best wines are selected each year to make the Tête de Cuvee that captures the essence of that year’s vintage. It has characteristically fine bubbles, with elegant, complex aromas and is laid down in our freestone cellars for two years before sale.

As an aperitif of course but also accompanies all meals.

Rendez-Vous
Rendez-Vous is our premium quality Sparkling Vouvray. Made with 2002 vintage wines (90%) and 2001 (10%), this cuvée have been bottled in october 2003 and aged for 4 years in our cellars, awaiting for the time of tasting, the d-day of the Rendez-Vous.
The bubbles are now very fine and the subtle aromas of the aged chenin balance between white fruits and roasted dry fruits.
It's Finally a great Vouvray !

Pétillant
The Vouvray Pétillant retains the full wine aromas of the Chenin thanks to its low levels of gas. Fermentation in the bottle is less intense, and the bubbles less present on the palate.
Serve with
It is an aperitif wine and goes well with all meals since it is a good accompaniment with starters, cooked meats, fish and white meats.

The Cuvee Réservée is vinified using the Méthode Traditionnelle and is a blend of several vintages, giving a very fruity wine of uniform quality that captures the essence of sparkling Vouvrays.
